4tbsp good olive oil
2 garlic cloves crushed
1 med. onion chopped
8oz swede, peeled and cut
into small cubes
1tsp fresh rosemary, chopped
1tbsp balsamic vinegar
8 slices thickly sliced bread
(ciabatta is ideal)
2 garlic cloves, lightly crushed
for rubbing on toast
salt and pepper
Heat ½ the oil and add garlic, onion and swede. Saute until the swede has softened and is golden brown (about 10 mins.)
Transfer to a bowl, add vinegar and rosemary, keep warm.
Toast bread until golden on both sides but still soft in the middle.
Rub with garlic.
Pile mixture on, pour over the remaining oil, season and serve.
