This is a great recipe to do something different with your broccoli.
By roasting, the flavours are intensified and sweetened.
It is also a great way to perk up tired broccoli that has been in the fridge a few days.

Serves 4 – 5 as a side dish.

Preheat the oven to 180oc.
Cut 400g of broccoli into large florets, then peel the stalk and cut it into chunks.
Toss them in light olive oil and salt and pepper, then grate a little lemon zest over the top.
Roast in the oven for 20 – 30 minutes, until charred in places and cooked right through.
