Blueberry Pancakes

Ingredients

2 eggs
1 cup milk
2 Tblspns sugar
2 tpsns oil
1 small tub of berry yoghurt
½ cup rolled oats
1 cup flour
2 tspns Baking powder
1 cup blueberries
Oil

Directions

Beat together the eggs, milk, sugar, oil, yoghurt and oats. Leave to stand for 30 minutes. Sift in the flour and baking powder and mix with a whisk till smooth. Gently mix in berries. Heat a little oil in a fry pan and spoon in the mix. When they bubble it is time to flip them. Try making smaller piklet size ones which are easier to manage. Serve a stack drizzled with Vanilla syrup and a dollop of Greek yoghurt.
